Visitors come for the sights, stay for the sunsets and end up falling hopelessly in love with the Spanish spirit. As well as Gaudí’s architectural wonders and Palma’s beaches, Spain’s culinary scene is tantalising, tempting travellers from all over the world. Feeling peckish? Serves: 10
  • 3 Peppers – red, yellow and green (chopped)
  • 1 Onion (chopped)
  • 2 Celery Stalks (chopped)
  • ½ Cup Tomato Juice
  • 1 Cucumber (chopped)
  • 2 Cans Whole Tomatoes
  • 2 Tbsps. White Vinegar
  • 1 Tsp. Garlic (crushed)
  • 1 Tbsp. Olive Oil
  • Blend all ingredients together in a bowl.
  • Season with salt and pepper.
  • Leave to chill in the fridge for at least two hours.
  • Serve with crusty bread.

Spanish Tortilla

Spanish tortilla is the perfect mid-week meal. Spanish tortilla is the perfect mid-week meal.
Serves: 2-3
  • 1 Onion (sliced)
  • 3 Tbsps. Olive Oil
  • 5 Large Eggs
  • 250g Desiree Potatoes
  • Peel and slice the potatoes to make thin rounds.
  • Heat 2 tbsps. of oil in a 20cm diameter pan. Once hot, add the onion and potatoes.
  • Toss them in the oil and season well with salt and pepper.
  • Turn the temperature to its lowest setting, then cover and cook for 10 minutes.
  • Turn the potatoes over and cook for a further 10 minutes, then take the pan off the heat.
  • Lightly whisk the eggs, season with salt and pepper and add the potatoes and onions. Mix well.
  • Place the pan back on the heat and add the remaining oil.
  • Once the pan has reached a medium temperature, add the potato, egg and onion mixture.
  • Immediately turn the temperature down to its lowest setting and leave to cook for 20-25 minutes.
  • When there’s barely any liquid egg left on the surface, flip the tortilla and cook for a further 2 minutes.
  • Take off the heat and leave for 5 minutes. Serve hot or cold with a simple salad and fresh bread.

Churros with Chocolate Dipping Sauce

Serves: 8
  • 1 Cup Water
  • 1 Cup Plain Flour
  • 3 Medium Eggs (lightly whisked)
  • 100g Unsalted Butter
  • ¼ Tsp. Salt
  • Vegetable Oil (for deep-frying)
  • 200g Dark Chocolate (chopped)
  • 80g Icing Sugar
  • 1 Cup Milk
  • Mix the water and butter over a medium heat and bring to the boil.
  • Cook for 3-4 minutes, stirring frequently, and then remove from the heat.
  • Add the salt and flour, stirring with a wooden spoon until combined and the dough starts to come away from the sides.
  • Cover with cling film and set aside until cool.
  • Once cool, add the eggs one at a time, beating well after adding each egg.
  • Spoon the mixture into a piping bag with a 2cm fluted nozzle.
  • Add 6cm of oil to a saucepan and heat to 180°C (test with a cube of bread – it will turn golden brown).
  • Once the oil is hot enough, pipe four 10cm lengths into the oil, using a knife to cut the dough.
  • Fry for 1-2 minutes until golden brown. Then, use a slotted spoon to transfer them to a plate lined with paper towel. Dust with icing sugar.
  • Repeat the whole process with the remaining dough.
  • While you’re cooking the churros, combine the chocolate and milk over a medium heat. Cook, stirring constantly, until the mixture is smooth.
  • Remove from the heat, serve alongside the churros immediately and enjoy!
